Abstract:
Survey of the most common hydrocolloids is given. The hydrocolloids are grouped
into wall polysaccharides, soluble mucilage polysaccharides, reserve polysaccharides,
exudates, algal gums, microbial gums, and synthetic polysaccharides. Aqueous solubility
to form either dispersed or colloidal systems and gelling are discussed in case of starchfreee
binary hydrocolloid solutions and starch other hydrocolloid binary solutions.
Factors controlling rheological and textural properties of the binary systems are
discussed.
